Slow Cooker Shirataki Chicken Noodle Soup

2 7.05 packages GoSkinny Noodles Angel Hair
1.5 pounds chicken drumsticks
2 cups chicken stock
2 cups water
3 tablespoons olive oil
2 stalks celery
1/2 onion
2 cloves garlic
3 tablespoons coconut aminos (or soy sauce)
1/2 teaspoon smoke paprika
1 teaspoon black pepper
1 teaspoon thyme
1 teaspoon bouillon powder
1/2 teaspoon cayenne pepper, optional
Chop the veggies, wash the chicken, and leave on a colander to dry. In a slow cooker, add all ingredients. Cook on low for 6-8 hours. Take out the chicken, shred it, and put back into slow cooker. Turn slow cooker to warm, simmer 5 minutes, and serve soup hot. Makes 8 servings.
