Rice and Beans in Minutes

2 7.05 oz packages GoSkinny Noodles Rice
1 15.5 oz can black beans
1 tablespoon olive oil
½ cup diced onion
1 teaspoon crush garlic
Salt and pepper to taste
¼ cup chopped cilantro

Open GoSkinny Noodles Rice, drain, rinse and drain again. Set aside. Rinse black beans and drain. In a frying pan, add 1 tablespoon oil and saute onion until slightly brown. Add drained black beans, garlic, salt, and pepper and saute for few minutes, simmer to keep warm. In a medium frying pan, add GoSkinny Noodles Rice and stir fry for 2-3 minutes to remove excess moisture. Add squeeze of lime, cilantro and mix. Serve hot with sautéed black beans. Top with cheese (Queso Fresco) if desired. Makes 4 servings.
