GoSkinny Noodles Fried Rice

Fried Rice made with organic, odorless, low carb GoSkinny Noodles Rice konjac rice (shirataki) on white plate with yellow napkin

1 7.05 oz package GoSkinny Noodles Rice
1/4 cup frozen peas
1 tablespoon olive oil
1/2 cup chopped green onions
1/2 cup finely chopped carrots
1 egg, beaten
Salt and pepper to taste
If desired, add 1/2 cup diced cooked chicken and/or other veggies like corn

Drain liquid from GoSkinny Noodles Rice; rinse thoroughly and drain again, then set aside. Thaw frozen peas in microwave for 30 seconds and set aside. In a medium skillet, heat olive oil, add green onions and carrots. Stir fry 3 - 5 minutes. Slowly add beaten egg and scramble with the veggies until done. Add GoSkinny Noodles Rice and peas. Add salt and pepper to taste, and stir fry 2-3 minutes. Serve hot. Makes 2 servings.
