GoSkinny Rice Pudding with Berries

Rice Pudding and Berries made with odorless, organic, low carb GoSkinny Noodles Rice konjac rice (shirataki)

½  7.05 oz (about 3.5 oz) package GoSkinny Noodles Rice
5.3 oz plain non-fat Greek yogurt
½ cup chopped fresh or frozen berries (blueberries, raspberries, or strawberries)
Sweeten to taste with honey or sugar substitute like Stevia
Additional berries, if desired

Drain and rinse GoSkinny Noodles Rice well. Microwave or parboil for 2 minutes. Rinse under cold water, drain well, and let cool. Mix all ingredients together until blended, being careful not to crush berries. Top with additional berries and serve chilled. Makes 2 servings.

Alternate Serving Suggestion: Instead of honey or sugar substitute, you may also sweeten to taste with light blueberry jam if desired. One teaspoon of light blueberry jam contains about 7 calories, 1g carbohydrates.
