Spanakorizo: Greek Spinach Rice

Spanalorizo Greek Spinach Rice made with GoSkinny Noodles konjac rice shirataki
Adapted from JJ Johnson's Greek-style Rice with Spinach, Feta & Pine Nuts

¼ cup extra-virgin olive oil
1 medium onion, finely chopped
¼ cup freshly squeezed lemon juice
2 cloves garlic, minced
1 teaspoon salt
¼ teaspooon ground black pepper
½ cup sliced scallions
1 tablespoon finely chopped fresh dill
2 7.05 oz packages GoSkinny Noodles Rice, rinsed and drained well
8 oz baby spinach, coarsely chopped
2 tablespoons pine nuts
⅓ cup feta cheese, crumbled
Chopped flat leaf parsley for serving

Heat olive oil in a large pan over medium-high heat. Add onion, stir and cook until softened and almost brown. Stir in lemon juice, garlic, salt, and pepper. Add scallions, stirring constantly about 1 minute. Stir in dill. Add well drained GoSkinny Rice and stir over medium-high heat until liquid is absorbed. Stir in spinach, remove from heat, and let stand covered until spinach has wilted (about 5 minutes). Add pine nuts and transfer to a serving bowl. Sprinkle with feta and parsley. Makes 3-4 servings.
