Quick and Easy Spanish Rice

Easy Spanish Rice made with GoSkinny Noodles Rice konjac shirataki in skillet with avocado and peppers

Ingredients
1/8 onion
1 Roma tomato
½ teaspoon minced garlic
2 7.05 oz packages GoSkinny Noodles Rice
1 tablespoon olive oil
½ cup frozen peas, carrots, and corn mix
1/4 cup pre-cooked black beans (optional)
1/8 teaspoon turmeric
Salt to taste

To make tomato sauce, place tomato, onion and garlic in the food processor and blend for a few seconds until it is a thick liquid; set aside.

Drain rice, rinse well, and drain again. Set aside. Heat medium-size pot on medium heat, add olive oil and rice.  Add tomato mixture, frozen vegetables, and black beans (if desired), and mix. Add turmeric and salt to taste. Stir until everything is incorporated and fluffy, about 3-5 minutes. Enjoy with a squeeze of lime! Makes 2-3 servings.
