French Onion Shirataki Bake

Ingredients
1 7.05 oz package GoSkinny Noodles Spaghetti
2 medium onions, thinly sliced
1 teaspoon olive oil
½ teaspoon dried thyme
½ cup low-sodium vegetable broth
¼ cup grated Gruyère or Swiss cheese
1 tablespoon whole wheat breadcrumbs (optional)

Caramelize onions in olive oil over medium-low heat for about 15 minutes until golden. Add thyme and stir. Deglaze with vegetable broth and simmer for 2–3 minutes. Rinse, drain noodles, and dry-fry for 5 minutes in medium frying pan. Add noodles to onion mixture. Transfer mixture to a baking dish, sprinkle cheese (and breadcrumbs, if using). Bake at 375°F for 10–15 minutes until bubbly and golden on top. Makes 2 servings.
